Bits and bobs from a cow

 In a few days, my hubby and I will be getting 1/4 of a cow from a local farmer. We asked them to give us the bits that they'd normally throw away, which include:

1. Brain
2. Tongue
3. Heart
4. Pancreas, etc
5. Tail
7. Liver

And who knows what else. We've never gotten a cow like this before and I've never cooked any of the things I mentioned. We're really, really excited about it though, and I figured if ANYONE had cooking suggestions for these ingredients, it would be my beloved food porners.

So, does anyone have recipes or cooking suggestions for any or all of these bits? It's all appreciated!
