Man. I'm so glad this isn't in front of me...I'd break my gluten free diet for this.

I hope you can! It's so delish. I believe you can just ditch the flour in the cheesecake itself, but then there's the matter of the crust.

I have a recipe for gluten free thin mints and I use those cookies, undipped in chocolate, for the crust on a grasshopper pie. I bet if I left out the mint, they'd work.

That sounds perfect!! How about ice cream? At first, I would think it'd be gf, but then again, I know gluten hides in some products.
