2 yellow summer squash, sliced 1/4 cup chopped onion (i like vidalia) 1/2 tspn salt, divided 1 egg 1/4 cup mayo 2 tspn sugar pepper to taste 1/2 cup shredded cheddar cheese 1-1/2 tspn melted butter bread crumbs 2 pats of butter cut in half
In a saucepan combine squash, onion, and 1/4 tspn salt. Cover with water and bring to a boil. Reduce heat and simmer until squash is fork tender. Drain. In a bowl beat the egg, mayo, sugar, pepper, and remaining salt until blended. Stir in cheese and squash until all is covered in mayo mixture. Transfer to a greased baking dish. Cover with a thin layer bread crumbs and sprinkle with some cheese. Arrange butter pats around the top. Bake uncovered at 350 degrees for 25-30minutes or until golden brown and bubbly.
