I posted the recipe I used below. This is the first time I've battered something, so I guess it's beginner's luck? The oil was very hot, and I made sure it was coated evenly and transferred it to the oil very quickly.
I usually do but I didn't today (I was hungry). They turned out okay though.

The only thing I hate is that it makes my house smell like oil for at least a day. Your batter looks perfect - how do you make it?
Do you parboil the chips?
