Okay, so at certain times, a girl needs her chocolate cake. Actually I was craving doughnuts, but cake would do the trick. I didn't feel like making the trek to the doughnut shop down the street, so I decided to try this ridiculous recipe that my mom sent me the other day. And you know what? It's actually really good. So I thought I would share it with y'all.
Coffee Mug Chocolate Cake
4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
a small splash of vanilla extract
1 large coffee mug
1. Add flour, sugar and cocoa to mug, and sift together.
2. Add the egg and mix thoroughly.
3. Pour in the milk, oil, chocolate chips (if using) and vanilla extract, and mix well.
4. Microwave on high for 3 minutes. You'll see the cake rising out of the mug; that's normal. It will shrink back a bit when done as well.
5. Let cool for about 2 minuites in mug, then turn out onto a plate.
6. Serve with ice cream, whipped cream, or whatever you want!
Seriously, I just made this and it's pretty darned good. Like anything made in the microwave, it is a bit more rubbery than a regular cake, but not unbearably so. I made it with chocolate chips, but because they are heavier than the rest of the ingredients they tend to bunch at the bottom of the mug. I think that makes the one area of the cake a bit too sweet for me, so I will forgo the chips next time. All in all, it was a successful experiment!
