Using up the rest of my veggies, an egg and some Italian bread crumbs, I made the best sandwich ever! I had red and yellow onion, red cabbage, cucumber, green and yellow bell pepper and fat free provolone cheese to work with.
I started out with two slices of Whole Grain bread, Light Miracle Whip on both sides and brown mustard on one side. I sliced up the yellow onion into rings with a medium thickness and put them in the scrambled egg wash and then into the bread crumbs and fried them in 2 tbsp vegetable oil.
After the rings were done, I noticed that I still had some egg and bread crumbs left over, so I decided to put one of the cabbage slices in it and fry it like the 'onion rings' turns out that this was a great idea, and after a few seconds, the assembly began!
First with the fried cabbage onto the mustard side of the bread
Followed by the onion rings on top and thinly sliced red onion on the other side of the bread
On top of the red onion the layering began! First with the green bell pepper
Criss-crossed (to keep it from completely falling apart when you pick it up) with the yellow bell pepper
Followed by a layer of cucumbers
Then a round of raw red cabbage
I melted a slice of fat free provolone on a plate in the microwave (not so much that it's really gooey, but enough that it's shrunk and you can stretch/form it), scraped it off and put it over the onion rings on the other side.
I have a jar of sweet/hot jalapeno slices in my fridge that I've slowly been working my way through and thought this would be a good opportunity to use some of them, so I put a few on top of the cheese.
Flip carefully, cut in half and enjoy! I had a few onion rings left over, so I ate them on the side.
