Chicken Paella?

I attempted to make a bastardization of paella last night. Two main issues -- one, my girlfriend is allergic to shellfish, so I cut that out completely. Two, we are both moderately obsessed with healthy eatin', her because she wants to maintain her weight, me because I am obsessed with working out. So here's what happened:

I make a similar faux-paella dish as my PMS comfort food (essentially identical, but without the peas and saffron). I add in Sriracha hot sauce to compensate for the lack of (spicy) sausage. Also, I've made it with salsa instead of stewed tomatoes. I hear spanish chefs rolling in their graves.

We know it's a given about fresh tomatoes, so let's presume you need to go canned again -- some brands of canned tomatoes pre-season them in various ways. Maybe a can of a friendly-seasoned tomato instead?

I always add turmeric to my faux-paella along with the little pinch of saffron.

Looks good! :) I think that's the beauty of paella; you can make it however you want. I usually add some paprika to mine...sometimes cumin as well...
