Chicken Paella?

I attempted to make a bastardization of paella last night. Two main issues -- one, my girlfriend is allergic to shellfish, so I cut that out completely. Two, we are both moderately obsessed with healthy eatin', her because she wants to maintain her weight, me because I am obsessed with working out. So here's what happened:





I just sliced up three chicken breasts into strips, cooked them 'til they weren't pink in olive oil, set it aside, threw a diced up onion and three cloves of garlic. Cooked that up until the onion was translucent, added about two cups of (low sodium) chicken broth and a can of stewed tomato, some oregano, about 1/8 of a teaspoon of saffron, a table spoonish of kosher salt and freshly ground black pepper -- brought it to a boil. Added a cup of brown rice (instead of the white that I imagine is usually used), about a cup of frozen peas, and a sliced up red pepper. Simmered it for about an hour, until the rice was tender.

Fairly tasty, but it still seems like it NEEDS something. I know that fresh tomatoes / fresh peas would do something, but I was mainly using what was on hand because I am inherently lazy and my tomatoes and peas are not ripe for the picking in the backyard yet.
