Hi!

I've got a bunch of corn, tortilliast, and noodles i need to use up. Does anyone know of some meat, milk, egg, yogurt, anything else made from milk, gelitan, lots of nuts, lots of semolina, lots of startch free recipes that will use them up? I've been eating a lot of asian food, but i would like to branch out and try some african recipes, and ( Read more... )

Hmm... succotash? If you've got corn to use up, that'd be a good way. I'm not 100% sure what goes into succotash but I'm sure you could make it without any of the things you listed... it would require beans of some kind but I think thats pretty flexible. It's meant to be eaten as a stew but I've had it in a Native American restaurant where they served it almost as a dip with some crusty bread - I imagine it'd be equally good with your tortillas, especially if you toast them a bit with a little butter. It'd be pretty healthy too!

Mmm, I made exactly this the other night. (Well, not exactly. I added corn cut from the cob, and an avocado cut into big chunks, and I ate it in a pita.)

Steam some squash, roast or sautee some onions, and mix them with the corn. Mash up an avocado with lime juice and fresh cilantro. Stuff it all into tortillas with fresh tomatoes.

How is soy for you? Fish?
You could try making a corn + pasta pudding with soy milk, whatever aromatics you like, etc. Fry those tortillas up for some nice fresh chips, crush them on top if you want to go more south-westy.
Depending on the tortilla size, and if you're OK with fish, you could make some awesome fish tacos or burritos. You can even make your own corn salsa for them like indefatigable42 suggested. I would roast the corn, take it off the cob, mix it in with a little vinegar, red onion, tomato, maybe some avocado. Boost the heat with whatever you like - or don't, it should be good on its own.
When you say that you want to avoid lots of starch, I guess you mean beyond the corn, pasta and tortillas?

Oh - duh - if soy doesn't work for you for the pudding, use the cream of wheat. It'll change the texture and flavor a bit, but it should still be good.
