For me a good mojito is all about the mint. Mojitos do have sugar in them so a little sweetness won't be a problem but you'd want something that really plays up the mint flavor.
I am sworn to secrecy on the original recipe (I didn't like it when I made it the first time - the cake was pitiful) but I will post what I do.
I'm literally making a rum cake, soaked in a rum soaking syrup after it is done baking and cooling, torte it, fill it with key lime curd, and than frosting it in a 1/2 butter, 1/2 shortening buttercream which will be heavy on the mint.
I'm going to airbrush the cake with a slightly greenish yellow and than a minty green at the bottom, put candied lime slices on the top with swirls of whipped cream with mint leaves.
I'm making this for a Havanah night at a local restaurant in hopes they'll pick it up for a menu item.
I agree with the others, the mint is what makes a Mojito for me. Not too sweet, but crisp and minty. I'd love to hear how the cake turns out and perhaps get a peek at a recipe :)
