clueless about squash!

while grocery shopping the other day, i picked up a butternut squash on a whim. not so much on a whim, to be honest, but more so because my good foodie friend seems to use them frequently in her cooking adventures, and i wanted in on the squashy goodness. so, if you could all be awesome and let me in on your favorite squash recipes, i would be ( Read more... )

I don't have a recipe yet, but I'm planning on making butternut squash ravioli later this week! I've made pumpkin ravioli (deilicous) and I've heard with squash it's great too. I'm sure Allrecipes or one of those sites would have a recipe. However, it's hard if you don't have a pasta machine to roll the pasta out flat.

yes, sadly no pasta machine, but i've had pumpkin ravioli and it was wonderful, maybe i'll try to find access to one and experiement.

I had butternut squash gnocchi with balsamic at thanksgiving. Sadly, I do not have a recipe for it, but I imagine you could find a similar recipe online.

mmm, i made regular potato gnocchi for the first time last week, so this could be the perfect thing! i found some good recipes along those lines on epicurious, thanks!

Peel it. Cut it in half and take the seeds out. Dress it with a bit of sunflower oil (make sure to get the bottom too). Put it on a baking sheet with some salt and pepper. Bake at 425 for about an hour. It'll get all burned-looking on the bottom and a bit on the top; don't worry - that's the good stuff. Then, when it's done, cut it up and use it to make quesadillas with black beans, salsa and avacado. It is truly the food of the gods.

I roast it and then use it in risotto with chicken, fetta, spinach and pinenuts... it's one of my favourite meals
