clueless about squash!

while grocery shopping the other day, i picked up a butternut squash on a whim. not so much on a whim, to be honest, but more so because my good foodie friend seems to use them frequently in her cooking adventures, and i wanted in on the squashy goodness. so, if you could all be awesome and let me in on your favorite squash recipes, i would be ( Read more... )

I cut it in half, roast it, then peel and cube once it's cooled (or not if I'm impatient). Brown some sausage (I like hot Italian, but anything will do). Toss together the squash, sausage, onion, sage (sliced, minced, whole, whatever...), kosher salt, pepper and olive oil. Sometimes I add cinnamon, nutmeg or cayenne. Roast at 400-450 (pretty flexible, just depends on if I'm baking anything else) for about 30 minutes. Pinenuts or walnuts would be a good addition.

Or I roast it slightly less, so it's firmer, and cut it into smaller chunks, and do a hash with the same ingredients.

Make a big, rustic stew with little chunks of roasted squash in it.. mmm, serve with a nice crusty piece of buttered bread :D

I'm thinking canned tomatoes, escarole (or kale or spinach), some big white beans, chicken/veggie broth and the squash of course :)

I like my butternut squash just baked in the oven with some butter and salt and pepper on. I split it in half, scoop out the seeds and then add the butter and seasonings. Bake on a cookie sheet for about an hour at 375oF. or until fork tender. Cut into wedges and serve on plates. This is an excellent side vegetable. You can also scoop out all the cooked squash, put in bowl and mash with more butter and serve like you would, mashed potatoes.

My first butternut experience was last week, and I used this community's tags as a guide for preparing and roasting it in cubes, then threw it into a risotto.
