hi friends. i stopped off at trader joe's tonight after work to pick up a few provisions because i'm starting to get sick and i doubt i'll want to do much cooking let alone shopping over the next couple days. tomorrow night i'm making lentil soup but that was already on the menu for the week ( Read more... )

Yum! Chop up the veggies as fine as you like them and lightly fry in oil of your choice (I like olive). Onion and garlic are good here (and good for your cold), and just about any vegetable can work (I don't like potato or pumpkin here, but parsnip is nice). Tip the soy ginger broth over the top and simmer.

I'm not sure how much broth you have - if there's enough to cook the noodles as well, just tip them in and make a delicious noodley soup. Same if the noodles are the soft kind. If they need to be boiled and you don't have enough broth to do it, boil them separately, put them in a bowl, then tip the broth/vegetable mix over the noodles.

If you have the stuff, I'd make hot and sour soup with it. do exactly like this, but add bamboo shoots and wood ears (if you have them - they're okay without, but woodears are GREAT for colds), then add some chili paste and a shot of rice vinegar. I also fry some tofu in with the veggies.

If you have any shitake, you can make a great soup with the broth and the veggies and mushrooms too.

Soy ginger broth? What brand? I used to buy cartons of Imagine Foods soy singer broth, but they have ceased making it. Which makes me very sad because that was on of the ingredients of my favourite quick dinner. I'd add soba noodles, shrimp or imitation crab, mushrooms and whatever veggies I felt like tossing in.

not sure (i'm at work right now...) this was the first time i saw it at tj's in the same aisle as the chicken and veggie broth.
