Wedding Pie

I want to make my own wedding cake, except I want it to be a wedding pie. A pumpkin pie to be exact.  The problem is that I'm not much of a baker.  Ask me to make duck confit and I'm there. Ask me to bake a pie and I'm dumb-founded.

I want it to lok like a cheesecake though (see sketch behind cut)so I figure I can use one of those deep pans with ( Read more... )

well i see a number of ideas here. you could make the diamonds out of maple ish candy and maybe use maple frosting to pipe those lines you like? also possibly chocolate of some sort or maybe make the diamonds crust. I just think maple would go with pumpkin the best.

I made mini cheesecakes for my Girlfriends wedding...they turned out wonderful and everyone loved them AND they are sooo much simpler. You could put mini diamonds on each one....OH and they freeze well.

There are a lot of good suggestions here, and I would go with the pumpkin cheesecake to get that shape -- of course that's not a pie. =o)
For the decoration, if you want something that's both tasty and beautiful, I would make the diamonds from chocolate using the transfer method. Use white coating chocolate (unless you don't have any trouble tempering chocolate) and use chocolate colouring paste to match your scheme. Trace the diamonds in the sizes you want to use, on paper. Then using clear acetate trace the diamonds in chocolate outline, let dry then flood the outline. You might do 2 or three coats so the chocolate is nice and thick, then peel off the acetate and voila: shiney smooth triangles for your "cake." Make a few extra JIC.
