I want to make my own wedding cake, except I want it to be a wedding pie. A pumpkin pie to be exact.  The problem is that I'm not much of a baker.  Ask me to make duck confit and I'm there. Ask me to bake a pie and I'm dumb-founded.

I want it to lok like a cheesecake though (see sketch behind cut)so I figure I can use one of those deep pans with ( Read more... )

Thanks. Oh I was going to do one practise round and if it didn't work I was going to hire someone.

I'm all for no stress but I figured if I can pull it off on the first try than I might as well save hundreds of dollars doing it.

The pumpkin pie would be waaaaaay to soft to stand up in this kind of configuration. However, you can make a pumpkin cheese cake, let it solidify some and then add a thin layer of pumpin pie filling on top. This would also hide a multitude of cheesecake sins (like says cracks). You can also use eggs to color peices of pie scrap to make your diamonds. Just add a little bit of food coloring (or natural coloring) to a beaten egg and glaze the dough with it. Works great and it's shiny. And for the ribbons you could use tons of different things. Like fruit leather.

I love the idea of pumpkin cheesecake with pumpkin pie filling on top. Yummo!

What's the weather/temperature going to be like?

If it's really hot, I'd go with the fondant. If it's cooler, chocolate would be lovely.

I'm not that hot on fondant. I'm not sure how the flavor would work with pumpkin pie or pumpkin cheesecake for that matter.

Maybe you could do something with dusting either colored powdered sugar or colored crystal sugar over a stencil of a diamond and then using chocolate to make the lines?

I've always said I wanted wedding pie instead of wedding cake. Rock on, sister!
