RE: Veggie chili - I've done a totally meatless version, can of black beans, can of kidney or pinto beans (I like S&W's Pinquitos - I think it may be a Cali brand), and a white bean (Canelinni or somesuch), can of diced green chiles, diced tomatoes, tomato sauce if needed, fresh dice onion and garlic, chile powder and cumin. Yum! We call it Chile con Canny ;o) Oh, you can add a dollop of sour cream for a finishing touch. I'm hungry for lunch now and I haven't even had breakfast!
That's what the general consensus is - Edwards has his eye on the prize, and really doesn't want to play second chair. (Darn shame, because it'd be a great way to kick-start his next bid for the POTUS.)
I'm eating a bowl now - it has some heat to it, but it's good. The baby portobellos that I found really add a 'meaty' punch. (And your version sounds yummy!)
