My mom used to make stir-fried okra, which wasn't slimy. (Of course hers was the Southern version, stir-fried with a strip of bacon). I believe the trick is that if you stir-fry long enough, the sticky part caramelizes. Mom's always came out with crunchy brown spots that were surprisingly tasty.
