Overall, we were very pleased with how it came out, but we definitely see a few modifications that would be beneficial. We're thinking two pounds of russet potatoes, cut into 1/2" cubes, and maybe one more sliced carrot would be good. I personally would add another stick of celery, but Aimee doesn't like celery too much and it was made for us, not me alone. *grin* The barley was perfect in quantity. It would also benefit from another tablespoon of minced garlic.
The McCormick packet added way too much salt (3.5g!), so we're thinking the replacement for that would be about a teaspoon or tablespoon of salt, a teaspoon of sage, a teaspoon of rosemary, a teaspoon of cinnamon and a teaspoon of pepper.
Aimee would agree with you, actually. She detests onions, and I end up using frozen onions when cooking for the both of us, cause she can tolerate those cause the texture isn't the same.
And indeed it was, in fact, disgustingly yummy. I'm looking forward to attacking the leftovers soon enough!
