Cravings: risotto

I have been  craving a creamy risotto for days -- maybe one with butternut squash and gorgonzola cheese?

In fact, something just like this would hit the spot

I have made this, and it's so frikkin' good it makes me want to cry a little! It takes a bit of time for the stirring, but it's so worth it.
