mmmmm, matzah balls

we haven't been keeping much by eggs or dairy in the house of late, but i bought eggs last week to make some blue corn jalapeno cornbread for the crafterpillers meeting (it's an out-of-the-box mix from trader joe's, and rather good). since we had eggs on hand, we took advantage of the situation and made ( matzah ball soup )

i love it too, and, despite it being officially spring, it's still been chilly here, so soup is good!

we make the matzah balls from a box/mix. you just add 2 eggs, some oil, and the powder. the soup consists of various vegetables cooked in a pressure cooker, and some soup mix and random herbs/spices thrown in. soup and stir fry are things we frequently make from whatever we have on hand; no specific recipe.

That looks so good -- I'm going to have to pick up a mix (yeah, most of the stuff I make is from a mix too) and make some myself this weekend! I bought eggs for stuffed peppers recently that I need to use up, and we just had a cold front, so I think I have an excuse!

mmmm, stuffed peppers sounds really good, too. i think i'm just hungry! but i love having leftovers to eat for a few days, and the matzah ball soup is almost gone by now. sad indeed. enjoy yours!

they're these hard little square yellow things. like this.

ingredients = wheat flower (contails gluten), vegetable oil, salt, spices. No food colouring - no preservatives.
