Hi guys, I just wanted to show off my hazelnut cupcakes with hazelnut-mocha mousse filling and ganache from Vegan Cupcakes Take Over the World. I'm not a vegan, but I think these are sooo yum! I didn't have any instant espresso, so I used some instant coffee grounds instead and my blender is kind of crappy, so the mousse didn't blend as well as I ( Read more... )

Those look so fantastic! I have a few recipes from that book, but really need to just buy it.

I have always had crap luck making ganache -- yours looks so yummy!

I only had bittersweet chocolate chips so I had to add a bit of powdered sugar to the ganache, so it has a few lumps, but still tastes good. The last time I tried to do that, I only had regular sugar and it came out grainy :\ I think ganache is the only frosting I've never had a problem with -- what has your problem with it been?

My problem has been the texture - it is either too stiff and lumpy or too runny. I've tried it several ways - using a double boiler or the microwave method. I must be either heating it too much or not enough. It's frustrating, because it looks so amazing on the cakes!

Hm...I wonder if it might just be the wrong amount of cream or milk? Because I can't imagine the heat would be an issue.
