Turkey Quinoa Meatloaf

Which turkey quinoa meatloaf sounds more delicious to you?

One with carrots, celery, peppers, onion, kale, and BBQ sauce (no egg) from Bon Appetit

OR

One with cumin, basil, jalapeno, onion, egg, and ketchup from The Perfect Pantry

I usually make Ina Garten's turkey meatloaf, but have a box of quinoa that I want to get rid of and found these ( Read more... )

Out of those, I feel like the first would be best as I'm all for added nutrition. You can always cook it on a lower temp and check it for doneness so it won't dry out, or maybe even add a touch more of the sauce to keep it moist.

I'll look for the recipe momentarily, but an old standby recipe for turkey quinoa meatloaf for me has always been one with kale and goat cheese.

I'm not a huge basil fan (it's ok), but I'm definitely not a fan of basil with cumin and jalapeno (and I LOVE cumin) so I'd go for the first one ( ... )

I made a turkey meatloaf the other night that had thawed and drained chopped spinach, grated carrots, chopped shallots, chopped bell pepper, Emeril's essence, thyme, and garlic salt, panko and egg. I could see making a similar meatloaf with the quinoa instead of the panko (you say the quinoa is cooked? like if you put cooked rice into it?) and it would be good. I would put an egg in it, especially since the Quinoa might suck up additional moisture as it cooks more inside the meat. I think the recipe without an egg might be dry.
