Turkey Quinoa Meatloaf

Which turkey quinoa meatloaf sounds more delicious to you?

One with carrots, celery, peppers, onion, kale, and BBQ sauce (no egg) from Bon Appetit

OR

One with cumin, basil, jalapeno, onion, egg, and ketchup from The Perfect Pantry

I usually make Ina Garten's turkey meatloaf, but have a box of quinoa that I want to get rid of and found these ( Read more... )

I'm not a huge basil fan (it's ok), but I'm definitely not a fan of basil with cumin and jalapeno (and I LOVE cumin) so I'd go for the first one.

I wouldn't worry about the lack of egg - I make meatloaf all the time without eggs because I can't use up a whole dozen eggs before they go bad so I never have them on hand. In fact, I made meatloaf a couple of weeks ago with crushed tortilla chips in it and no egg and it was just fine. And really, the egg isn't so much for moisture (you could add a different liquid in if you wanted to - I usually put ketchup and mustard or salsa IN the meatloaf mix - I've also made a turkey meatloaf similar to the first one and used red wine in it) as it is for binding it together. So without the egg it won't be quite as firm and will fall apart more so you won't get those perfect slices like a perfectly homogenized meatloaf would, but it will still be tasty. You could also bake it for the majority of the time with foil over it and then take the foil off for the last 15 minutes of it really looks like it's going to be dry.
