This recipe sounds great... but I'm a little stumped by the photo (which is cute, and reminds me of an ardvark). Do you really do this with sliced, unpeeled sweet potatoes? Are diners expected to eat the peel or not?

LOL, I love that it now reminds me of an aardvark, too.

You can peel the sweet potato if you'd like, but I scrub the potatoes first and keep the peel on. The peel has bunches o' nutrients, and is a nice texture when roasted -- same as fries made with unpeeled potatoes or sweet potatoes, if you've had those. It's a preference thing :)

I made these tonight, and wow. I'm in love. It's taking pretty much all of my willpower not to go eat the second potato right this minute.

Did you use up all of the butter mixture and the full 4oz of goat cheese? I couldn't cram it all in there, and had about half left, even after generously spread extra goat cheese on the top of the potatoes. Well, I say top, but they were laying on their sides by the time I was done, because their "backs" were too bent for them to lay flat.

But you're right, they were still pretty, and the one I ate was SUPER tasty :D

I did, but I had long, skinny taters :) I think it'll depend on the size/shape of them. I actually do think I had some butter left now that I remember it, but I kind of just set it on top before baking.
