This recipe sounds great... but I'm a little stumped by the photo (which is cute, and reminds me of an ardvark). Do you really do this with sliced, unpeeled sweet potatoes? Are diners expected to eat the peel or not?

LOL, I love that it now reminds me of an aardvark, too.

You can peel the sweet potato if you'd like, but I scrub the potatoes first and keep the peel on. The peel has bunches o' nutrients, and is a nice texture when roasted -- same as fries made with unpeeled potatoes or sweet potatoes, if you've had those. It's a preference thing :)

It's not offensive -- my boyfriend said it looked like a "meat worm," whatever that means. LOL. I thought it looked like the Hungry Hungry Caterpillar :D
