I basically watch it as it mixes, thinking about it I generally don't go above 4.

This is, by far, my favorite recipe for my stand mixer:

French Silk Pie

it's one of those things where you COULD do it by hand but it would be a super pain in the ass to do so. (I usually use an oreo or other chocolate cookie crust instead). I get requests for this every single family get together.

Also, italian buttercream. mmmmm.

I can't help with the speed thing, my KA is so old it has 10 speeds and the top three are about the same...

the instructions in the KA recipe book are spot on.

Basically, if ingredients are jumping out of the bowl, running around the kitchen, and molesting your cat? Cut the speed a little :D

I don't actually look at the numbers. If it's not splashing out of the bowl or flinging dough everywhere, it's on the right speed :).

My husband says for creaming med-high 6-7 or so. For general mixing, around 4, 2 once any chunky stuff is in.,
