I can't help you on your questions, but question for you. This is on my list of wants when I can justify spending money on kitchen stuff instead of things like bills (*roll eyes* dang being an adult!). How much was it, if you don't mind me asking?

If only people had actually thought my husband was serious when he scanned the $400 mixer for our wedding registry. I wouldn't be drooling over something I can't have right now, lol.

I purchased it for $400 exactly at Costco. I'm sure there is a better deal for a Professional Series somewhere in my city but I'm impatient. Bot my Aunt & Grandma bought theirs at Costco and my Grandma spent $350 and my Aunt got hers for $300.

And dear me, I wish someone took that seriously for you! But hopefully you can find one on sale!

I have a beautiful kitchen aid (can't remember the model number) that I bought off Amazon. I signed up for their emails, which sometimes have amazing coupons. And I found a 50% off coupon for anything on their site. So I took advantage of that and bought myself a $400 stand mixer for $200! If you can set aside the money little by little and wait for one of those coupons, it's totally worth it.

Whipping egg whites for meringues and souffles. You have to keep an eye on it, or you'll get really stiff whites, but it's so much easier than doing by hand. Try forgotten cookies; they're delicious and light, and I always get compliments on them.

As far as speed goes, generally the denser your material, the lower the speed should be. For cookies, I turn down the speed when I add the flour, and turn it down even more when I add chocolate chips.

Marshmallows.
I do Alton Brown's recipe - but play with the flavors. The cold water you bloom the gelatin in can be replaced with, oh, just about anything.

My personal favorite so far includes a tablespoon or so of brandy, and a bunch of freshly grated nutmeg.
