I've just been reminded (by eating it) of another of my favourite ultra-quick recipes for using up what's in the fridge. In this case, I first met it when doing medieval cookery, so here behind the cut is the original - well, a translation from fifteenth century French for the longer of the two versions.

This recipe saved me a trip to the store the other day. I had a southbeach recipe that called for placing some of a frozen spinach souffle into a pounded chicken breast. I hand not shopped correctly, and only had a frozen block of regular spinach. I remembered this post, thought about what a souffle was and how it was going to be utilized in my recipe. Then I looked in my fridge and saw eggs, a bunch of dandelion greens, and some preshredded parmesian cheese. Voila! I made my own "souffle" (really omelette, but once you stuff it in a chicken what's the difference) without having to go to the store and spend any more money. Thanks for posting this!

Make a souffle just so as to use it as stuffing? That gets filed under "far too much faffing about" in my book! Sounds like an interesting recipe, once simplified a bit - what was the rest of it?
