The word you probably want to search for is "larding". A means of inserting thin strips of stuff (originlaly lard into lean joints, hence the name) into a joint, using a gadget known as a "larding needle".

Yes, larding is just the thing! However he was jamming stuff longways into the meat, not surface style like shown in your picture above.

What's happening in that picture looks mighty mighty tasty though, I'll tell you what.

I probably am remembering the filling ingredients wrong, as I said it was around 100BC when I was watching this show. :-)

Youre recipe looks AWESOME, and reminds me I need to go make the refrigerator horseradish pickles I have planned.

What I do remember clearly from the show I watched was that the items were inserted into the meat by jabbing, not by rolling.

Now I have so many options to explore!

Oh yay! Yes, after I posted that my google fu failed, I tried again and found a more recent version of the show's website, complete with recipes.

I guess I was wrong about the raw potato part. I wonder how that would work?

At any rate, I am excited to try this larding thing. I bought some free range grass fed organic local beef this summer from a family's friends farm. I should see what cuts I have left and experiment with them.
