Obscure recipe request

A million years ago, I was watching an episode of this:

I remember the host took a large cut of beef, poked some holes in it with some kind of reamer thing, then stuffed the holes with sticks of:
Carrot
raw potato
frozen pepperjack cheese sticks
and other things I can't remember, possibly green onions or regular onions, and maybe garlic.

The items inserted into the meat was done in such a way that when cut against the grain for final presentation, each slice would have a cross section of all the different things that were stuffed in there before grilling.

The end result looked amazing, and in the end not too complicated to pull off. It did look complicated enough that I would want to have more of an idea of what the heck I was doing before attempting this on my own. This is where I turn to you!

Does this recipe sound familiar to anyone? (I searched the website for the show and didn't see anything remotely similar. Googling the entire internet also failed.)
Should I just attempt it? I'm afraid of ruining the rather large cut of meat used for this. If I did attempt, what cut should I use?
