Of course I don't have the exact recipe lying around... but at one point last summer, I made a really good basil, tomato and corn risotto (go go Maryland's Eastern Shore!)
chez panisse vegetables has several luscious sounding risotti (?). haven't tried any since i'm dieting. pick one and i'll tap in the recipe. or if you hate them all that's okay too!
