Hello everyone, my first post, though I've been lurking and making recipes found here for a few months.

I'm looking for a vegetarian risotto recipe without mushrooms in it. I've checked the memories and didn't really find what I'm looking for... everything includes meat, chicken stock or mushrooms (which I dislike). Anyone have any recipes they love and are willing to share?
