What to do with courgettes?

Aug 02, 2009 20:29

I have four or five HUGE courgettes in the fridge and I'm about to leave for a week away, and I'd like to save them for use in something, it'd be such a waste if they just sat there because they'll be off by the time I come back. :(

Any ideas on what I could do with them?

vegetable: zucchini, leftovers

you could grate some of them and freeze them for bread or soup

I think if you blanch them, you can freeze them.

It is so, I googled it: http://www.thriftyfun.com/tf676463.tip.html

Scallop them and bake them like you would scalloped potatoes, with lots of cheese.
