Kale question...

Hello,

I keep hearing people all over say how good Kale is for you. It was on sale today so I bought one bunch of it. How do you like to prepare it? Can it be eaten raw in a salad?

here at my house we just boil the crap out of it with some smoked neckbones. i saw bobby flay make creamed kale once though.

Because kale is a rather tough leaf, it lends itself well to long cooking times and is a popular green used in collard greens. Just remember to remove the stem as it is very tough.

Actually, I love raw Kale*. Trick is that you have to remove all the stem and chop it quite fine. Then just dress it with soy sauce (or Bragg's), som vinegar and some garlic. Add some water chestnuts if you want to get fancy.

*Keep in mind, too that there are several different varieties of kale. The one I like best for this is a mid to dark green with ruffly leaves.

Italian Breaded Kale

1 large bunch fresh kale
3/4 cup salted water
1/4 cup light olive oil
1 med clove garlic diced
1 cup course bread crumbs
1 cup gated Parmesan or Romano cheese

Rince kale and tear into bit sized pieces, discard stalks.

Bring salted water to a boil and add Kale
cover and cook untill kale is just tender
Add oil, garlic bread crumbs and cheese, stir lightly and cook for about 3-4 minutes
Serve immediately
