Kale question...

Hello,

I keep hearing people all over say how good Kale is for you. It was on sale today so I bought one bunch of it. How do you like to prepare it? Can it be eaten raw in a salad?

Just the other day I made some kale mashed potatoes. I just boiled some potatoes in chicken broth with some garlic while I was sauteeing chopped (big pieces) kale in olive oil, a little salt, and some pepper. I mashed up the potatoes with olive oil and added a tiny bit of cheese for creaminess(I did not have any milk or butter) and then just stirred the kale in and seasoned. It was not totally wilted when I added it, it added a great flavor and texture. My husband absolutely loved it. I used the rest of the head in a sheperd's pie type of thing the next day.

it can be eaten raw, but it's kind of bitter. and raw kale makes me tired, but that could just be me.

i like it thrown into a pan with frying bacon, or sauteed with olive oil, garlic and balsamic vinegar

Mmmm kale. I recently converted my old-set-in-her-ways grandma AND my veggie-hating husband to kale! My faves:

Kale and Olive Oil Mashed Potatoes (Can easily be simplified or changed)
Kale Chips
Kale Salad with Pecorino and Lemon

I also mix it into soups and stews. Good luck!
