Kale question...

Hello,

I keep hearing people all over say how good Kale is for you. It was on sale today so I bought one bunch of it. How do you like to prepare it? Can it be eaten raw in a salad?

We love it - most commonly we saute it with garlic, then splash a little red wine vinegar over it before serving. Delicious! I've never eaten it raw, though.

This is what I do too.

My MIL is from the south and she *loves* the way I make my greens. Seriously, her face lit up the first time she had them. I guess in the south they tend to boil them to death?

This cooking method works really great for other kinds of greens too (except Collards, they need a little more work).

I'd never had greens of any kind (other than lettuce types) until we signed up for a CSA. Now I try to have greens at least once a week because I like them so much.

OOh I just found this and think I'll do it tonight -- could it work with some white wine in the sauce and sundried tomatoes -- possibly cottage cheese to make a white creamy sauce? I'm just making this up, but does it sound like something possible?

A favorite of mine: Saute onions first and add minced garlic midway through the onions becoming translucent. Once the onions are translucent (or nearly translucent), add the kale (stripped from the rib), add a big splash of lemon juice and then lightly (oven-)toasted pine nuts. Salt and pepper to taste. I absolutely love kale prepared this way.

I'm not sure about adding raw kale to a salad. It seems like it might be a little tough without being cooked in some way.

I love kale "chips"! :) They're great! I was dubious when I first heard about them, but they really are delicious!

Roast them! They get really crunchy, almost like potato crisps.

Toss with some olive oil and salt, and stick them in a preheated oven at 200C for 15-20 minutes (keep checking to make sure they aren't burning).

I don't think it would be tasty if you had them raw, though.

It wouldn't hurt to try! I've never done it myself with cooking spray, though. I doubt it would make much difference.
