Breakfast on the go!

Hey everyone!

I always eat my breakfast in the car on the way to work, since I leave the house at the crack of dawn. Generally, this means I warm up and take with me one of those giant poppyseed muffins from Costco. I recently learned just how unhealthy those fat-laden things are. How about some of those soup in a cup dishes. Most of them can be drunk from the container without need of utensils. *Some* of them must be healthy.

I can toast a wheat mini-bagel in 1 minute flat. A couple of those with a spread of something nutritious could be quite filling and offers some fiber too.

there are breakfast versions, although I can't remember the brand name right now--they're oatmeals, I think, probably to be found in the cereal aisle or the natural foods cereal aisle

i do the soup-at-hand thing on the way to work. but i like the 70-calorie chicken noodle one, but since the OP doesn't eat meat, that wouldn't work. and i know for a fact that brocoli cheese in the morning is kind of unpleasant. haha.

/bringing nothing to the table.

I really should bake my own, huh? I usually make some large meal like a pot of soup or a lasanga over the weekend so I can take lunches to work. I should start doing the same for my breakfast!

Yea... the banana bread is pretty buttery but the buttermilk muffins are very hearty and delicious. I know it's funny to call a milk-sugar-flour-oil recipe "hearty" but that's what they are. I usually pop them in the microwave for 20 seconds to heat them up before eating them.

Please don't tell the OP what you think is unhealthy. They asked for help not your opinion. Some of us don't have a choice on whether we eat sitting down or on the run.

There is nothing unhealthy about eating while driving as opposed to eating while sitting at your kitchen table. Honestly. What's next - eating out of a big bowl is unhealthy because you want to fill it up and eat more?? FOOD is healthy or unhealthy. Not the circumstances surrounding its consumption.

I'm on the south beach diet, and there are a few things I can suggest.

One is making "egg muffins" basically fritattas in muffin form. Another is a piece of fruit and some yogurt when you get into the office.

this is what I use too and it is vegan (and everyone I know gobbles them up)

I also double the recipe and add a can of pumpkin instead of the extra bananas - yummy!
