Farmer's Market

Hey y'all, so this Sunday is my weekly trek to the Farmer's Market. I've been living off of broccoli, zucchini, baby bok choy, celery and bags of arugala for the last month so please suggest a vegetable to purchase to broaden my horizons! Beets are cheap, mega-healthy and in season!

I like to cube them up (save the greens for cooking, salads, or green smoothies) pour on a little lemon juice, a little olive oil, some garlic, salt, and pepper and bake them at 400 degrees for 45-50 minutes or until tender.

They also make a mean veggie burger.

1) most of the berries at the Farmer's market are still expensive :(

2) I am really not into stone fruit :(

Eggplant.

Slice into 1/2 thick slices, broil or grill until very soft throughout, flipping as needed. Blend with juice from one lemon, a couple of cloves of garlic, a tablespoon or 2 of tahini, 1/4c water, and 1/2 tsp salt.

Plantains, I guess, are fruit... but they're not sweet, really, so I'm pretending it's a non-fruit suggestion. Get em, peel em, slice em, sprinkle with sea salt and bake em. Like healthy potato crisps but much tastier.

I'd like to suggest beets, too, if you're into root veggies. I toss beets and sweet potatoes (NOT YAMS, OMG AMERICAN GROCERIES I HATE YOU) with a some minced garlic, garlic powder, onion powder, pepper, salt, and EVOO and bake that until the beets are tender. Sometimes I add in parsnips and turnips, but those are more fall fruits than summer.

Radishes, carrots, and radicchio, with a few strips of pepperoncinis, are amazing just with Italian vinaigrette, imo.

What is EVOO...I have seen people say that other places and have no idea what it means.

i second the Eggplant thing. It is also fantastic in a vegan lasange and even cut into slices, coated in spices and fried. I like serving fried eggplants with a curry.

I don't remember if it was here or vegancooking but someone mentioned breading them with crushed veggie chips...I can't WAIT to try that!

Asparagus is yummy! Grill it or cook it in a skillet with a little olive oil and salt. You can chop it up and make a breakfast hash with your choice of vegetables, like mushrooms and peppers, tofu, spinach, etc....

Carrots are good of course. Tomatoes, squashes, bell peppers.

I also like making tacos out of fried, seasoned potatoes, (Mrs. Dash works fine), sliced cold cucumbers, romaine lettuce, salsa and cilantro rice. Those are nice and filling.
