Hey y'all, so this Sunday is my weekly trek to the Farmer's Market. I've been living off of broccoli, zucchini, baby bok choy, celery and bags of arugala for the last month so please suggest a vegetable to purchase to broaden my horizons! Bonus points if you also give me an easy recipe to go along with said vegetable

I'd like to suggest beets, too, if you're into root veggies. I toss beets and sweet potatoes (NOT YAMS, OMG AMERICAN GROCERIES I HATE YOU) with a some minced garlic, garlic powder, onion powder, pepper, salt, and EVOO and bake that until the beets are tender. Sometimes I add in parsnips and turnips, but those are more fall fruits than summer.
Radishes, carrots, and radicchio, with a few strips of pepperoncinis, are amazing just with Italian vinaigrette, imo.
