it was 111 degrees today and this heat is just KILLING ME. its down to 104 but thats still too hot to function.

needless to say, due to the heat, i am NOT up for cooking. what can i make thats simple, cheap, COLD and delicious? my husband isnt vegan but if it tastes good, he will eat it. i just cant bring myself to turn the stove on. :(

recipes, suggestions, no heat necessary

Gazpacho! If you dont' mind chopping, it's great for hot days. And my non-veg ex found it tasty.

It was 110 here today. I made ginger carrot soup early this morning and chilled it for dinner. A little late to do today, but if it is hot tomorrow, something to keep in mind.

I also prep tabbouleh and pasta salads early in the day.

Taco salad with lettuce, canned beans, chips, salsa and guacamole?

Chickpea "tunafish" (mashed up with relish, mayo, onion, mustard, dillweed and kelp granules) in sandwiches or stuffed into hollowed out tomatoes?

My dad used to make that with tuna when I was a kid, and it was a favorite meal of mine. Since going veg, I've tried all sorts of stuffings, egg salad and cottage cheese concoctions from my lacto-ovo days, tofu salad and hummus once I went vegan and NOTHING worked well, the texture of th etuna is integral to the dish. Then I happened onto the chickpea salad with fork-mashed chickpeas, and knew I had a winner. But it was February, and I was months away from good tomatoes.

I harvested the first globe tomato in my garden yesterday, and the first thing I did was go make a batch of chickpea salad. And it worked! The mashed chickpea has that flaky texture that I was missing. It doesn't really tast like tuna, but that's fine. It nails the textural contrast I wanted.

It's 90 here and I'm having nachos. I did heat beans on the stove though. Only for a few minutes.
