strawberry ice cream pie

One of my clients made a pie of lemon curd and vanilla ice cream layered in a chocolate crumb crust. I wanted to make a similar pie and take it to my grandparents' house for Easter. You can also get plain or flavoured dessert tofu and blend it up with fruit. I'd recommend sugarless fruit if you're using flavoured tofu or it might be too sweet. It works for vegan cheesecake. If you wanted to do this with lemon it might work, actually.

I'm too late for Easter, but if you decide to make this again, they do have vegan pudding mix at health food stores, which would probably work, you could get vanilla and/or add lemon juice and zest if you wanted it lemony.
