One of my clients made a pie of lemon curd and vanilla ice cream layered in a chocolate crumb crust. I wanted to make a similar pie and take it to my grandparents' house for Easter. Keebler graham cracker crust is still vegan, right (I haven't used it in forever and I know sometimes companies are like, "oh my god- there are no animal ingredients in this! we have to do something about that!")? And I could use vanilla soy ice cream. I'm not sure about the fruit filling though. Lemon curd has eggs in it, and I thought strawberries (or mixed berries) would go better with a graham crust anyway. There's the the frozen kind with the sugar added, but that might be too liquidy and turn the pie into a big sloppy mess. Would it be gross if I thickened the syrup with cornstarch or pectin? Or I guess I could add granola or something to soak up the juice.
I need suggestions.
