Apr 22, 2014 09:30

This easy snack cake packs an intense mocha punch! The espresso powder deepens the already fantastic chocolate flavor of the cake and smooth-as-silk frosting. Be sure to pour a tall glass of milk with this cake (or maybe a nice cup of coffee ( Read more... )

I was wondering - I've stopped using Baker's Joy and other sprays with flour because it makes breads, cakes, and brownies pull away from the sides of the pan. Have you had this problem? It's not necessarily a bad thing, but it ruins the nice domed surface.

The dome seems to be there for me no matter what, but it does make the sides pull away sometimes. I don't mind it, but you can also just make this in a well seasoned cast iron skillet (watch the baking times, though, since they can be inconsistent with cast iron -- check it early and often) or a pan lined with parchment!

Your cake and frosting look fantastic. Where do you buy your espresso powder, and what brand do you get? I live in the U.S. and I have looked on the baking aisle and the coffee aisle in my grocery store for espresso powder and I just haven't been able to find it.

Lately when I make chocolate frosting for brownies or cake and I want a coffee/mocha flavor, I use really strong hot coffee instead of warm water or milk when making it. But, I'd really like to just get the espresso powder.

Thanks for sharing.

Thanks! I just buy it at the grocery in the coffee aisle (by the instant coffee is usually instant espresso powder) and get the generic version. Hope that helps!
