Taking it off the heat when it's just slightly browned, and not putting it back on until there are other ingredients and some non-oil liquid in there as well.

echo * does not at all do what i expected. it's pretty neat!

also, screen is so full of awesome. i had a screen session with nearly a year uptime before the server it ran on got physically moved :)
