This is one of the good vegan stir fries I love to make. Really easy and quick. Better in winter though, because it's hot and spicy :)
Ingredients:
- 1/2 average yellow onion
- 1 large carrot coarsely sliced
- 1-2 cloves garlic, chopped finely or squeezed
- 1/4-1/3 grapeseed oil (or cold pressed olive oil)
- 1 average tomato chopped finely
- 1/2 (long) bell red pepper sliced
- 1 stalk celery chopped
- 2 white mushrooms sliced
- 1 average broccoli head, separated into florets
- a handful of raw peanuts
- 2 tbsp fresh basil finely chopped (or if using dried basil - 1 tsp)
- 1 tbsp organic dark soy sauce
- 1 tbsp organic rice vinegar
- 1 tsp sesame oil
- 1 tsp or less red pepper flakes
- salt to taste
- 1 cup coconut rice, steamed
Preparation:
In a skillet pour grapeseed oil, add onion, carrot and garlic and sauté for about 5min on medium setting. Once the onion starts turning golden, add chopped tomato, bell red pepper, celery, mushroom and broccoli*, mix well and sauté for about 5min more on medium. Now add peanuts, basil, soy sauce, rice vinegar, sesame oil, red pepper flakes and salt. Mix well, bring heat to maximum, cover with lid and leave on small setting for another 5-10min. Pour it all on top of coconut rice, or rice noodles.
*If you like your broccoli more crisp, then add them right before bringing heat to maximum, then cover with lid, turn off the stove, and simply leave covered for 5-10min.
