Vegan Falafels

hey fellow vegans, here's another thing that I make a lot in the summer - a pretty easy recipe of falafels this time - completely vegan. it's just awesome if you make it on a bbq, but if not - oven would work just fine as well.






Ingredients:
  • 1/3 cup cold pressed extra virgin olive oil
  • 2 cups soaked chickpeas (that would probably be equal to 1 cup dried chickpeas initially)
  • 1 medium onion, chopped
  • 3 tbsp fresh parsley
  • 3 tbsp fresh cilantro
  • 1-2 tsp salt
  • 1/2 tsp cayenne pepper
  • 3 cloves garlic
  • 2 tsp cumin
  • 1-1.5 dessert spoon of organic rice flour





Preparation:

You will need a food processor with an S blade (I use Hamilton Beach). Place soaked chickpeas into the processor together with onion and garlic, chop them until the chickpeas are mashed.




Then add cumin, salt, cayenne, rice flour, and keep mixing. Finally add olive oil, parsley and cilantro. Mix in food processor until you get a uniform mass. If it is too liquid, you can add some more flour - but don't add too much because the falafels would then have a bread'y flavour. After everything is mixed, place the covered container into the fridge for about an hour to cool and also solidify a bit. Once the mix is cooled, form it into balls with your hands and place them on baking tray (covered with parchment paper; if using aluminium foil, make sure to spread some oil on it). 
Preheat oven to 205 degrees Celsius, bake for 25-30 min. Once you see that falafels started to turn light brown, turn them upside down and cook for 5-10min more. 
Once ready, take them out, garnish with some lettuce, tomatoes, cucumber and serve with hummus. Enjoy! :)
