This is a recipe I've adapted from the back of a cornmeal package. And goes like so:

OVEN FRIED CHICKEN (or Mushrooms!)For Chicken, use a LARGE baking dish with about 1/4 cup butter. For mushrooms, a square pan will do, with 2-3 tbs butter. The recipe calls for less, but trust me. More is better ( Read more... )
