Okay, I know I've posted
breakfast tacos before, but they're just so good I had to do it again.
Cherry Tomato, Mushroom, Green Onion, and Veggie Sausage Breakfast Tacos
Ingredients:
1 handful cherry tomatoes
1-2 handfuls sliced mushrooms
2-3 green onions
2 vegetarian sausage patties (I used
Morningstar Farms Veggie Sausage Patties)
2 flour tortillas
2 eggs
1 handful shredded Mexican cheese
Salt and pepper
(Soy) milk
Butter
Slice your tomatoes in half and cut your green onions into pieces about a centimeter or two long. Microwave the veggie patties as per package directions. Whisk your eggs with salt, pepper, and a tablespoon or two of soy milk. Melt some butter in a pan and sautee the mushrooms until they've shrunk considerably. Remove the mushrooms from the pan and scramble the eggs (your might want to wipe out the pan and regrease it before doing this, otherwise your eggs will turn brownish from the mushroom juice). Throw in the cheese and cook until melted. Throw in the tomatoes, onions, sausage, and mushrooms. Serve wrapped in warm flour tortillas.
