I like subscribing to the on-line edition of the New York Times. gorinda's comment on the post just reminded me that I never did say what Mom did with the eggplant. She ended up roasting it in one of her big Pampered Chef stoneware dishes with a bunch of other veggies (after cooking it in the microwave- sorry Jer) & some seasonings. So does anyone on my f-list have a good recipe for baba ganoush? Mom brought home a big eggplant & isn't sure what to do with it. I wasn't much impressed the only time I've haad eggplant parmisan ('though I'm willing to give it another try), but I really like the baba ganoush at the middle eastern resturant here in town.

I've been known to have some fluctuations in my eating habits but this is getting insane. I think the atypical mood stabilizer they've got me on is making me eat a lot. And I mean, a *lot*.
