I went to the farmers market this morning with a very specific list. But the eggplant and zucchini looked so good and I think I may have gone a little overboard.

When I bought my house I had a glorious tree in front.  One morning about two years ago, I came home from work to find that they had cut it down without telling me.  In retrospect, that was probably a good thing, seeing as it was a cotton wood tree, and I am extremely allergic to cottonwoods.

I hit a home run with this Kenzie original recipe. Key lime pie Popsicles! A sweet and tart low cal treat for those hot summer days.

Ingredients
2 c. So Delicious Vanilla Coconut Milk
1 14oz can sweetened condensed milk
3/4 c. Key Lime juice (fresh or bottled)
3 large graham crackers

In the past 8 months, since starting at excelsior, I have made a new group of friends who slowly but surely are becoming close friends. So yummy!
Chop up a red and an orange bell peppers a red onion and a whole pineapple. Toss with a couple tablespoons of grape seed oil salt n pepper to taste and 2 tablespoons of light brown sugar. Bake at 350 for 20-25 min. Squeeze juice of 1 lime and a handful of unsweetened shredded coconut. Serve over quinoa. YUMMY!!!

I made a really yummy quinoa bread this weekend (my weekend). I didn't us a recipe. I added about a cup of quinoa in place if a cup of flour. It made it really soft and chewy and it was pretty wet dough so it had a fabulous crust too.
Just for decoration I added an egg glaze and black sesame seeds. Purdy.

Home made sushi ho!!!! I made all vegetarian sushi the other day. The rice was kinda a fail. I used the long grain brown rice I had on hand mixed with a little quinoa. The brown rice just didn't work. It looked great but as soon as you picked it up it fell apart
Tasted good too!!!
